The NN-BC plate only provides good contact between the heel and the binding when the heel is fully compressed (flat). What I've found is that with plastic boots, even something as soft and touring oriented as the Scott Excursion, the cable in the Voile 3-Pin Cable binding does not make much difference. The plastic boot provides good torsional rigidity, and the cable doesn't add enough stiffness to be much noticeab...

The Nansen in 195 was actually my first ski and I remember going Gamme in 200cm as a huge improvement. I think the Nansen flexes to soft in deep snow. If possible, I would prefer to use NNN BC - which is why I'm pondering whether that might be beyond my skills with a ski of that width. Mind, the turns would be parallel, not tele. UP, unfortunately there is no such thing as a waxable epoch or annum, never has been. For a waxable nordic backcountry ski in that width category, you are pretty much limited to the Asnes Rabb/Voile Objective. Something in that price range anyways.
